Preheat the oven to 200 °C degrees. Cut the strawberries in half and the figs in parts.
Toss all the fruit together in a bowl with 3 mint sprigs, vanilla pod halves and seeds, lemon juice, icing sugar and 80 ml of water. Transfer to the oven dish. Roast for 20 minutes until soft and bubbling. Set an alarm after 10 minutes, to toss once halfway through.
Allow to cool down to room temperature.
To serve, scoop the Coco Frost Cocoa and Coco Frost Vanilla into bowls or on a plate and spoon over the roasted fruits. Pour over the juices and garnish with mint leaves.
